- 2 ripe bananas (mashed)
- 1 cup old-fashioned rolled oats
- 1/2 cup dried cranberries
- 1/2 cup semi-sweet chocolate chips
- 1/4 cup pepitas (pumpkin seeds)
- 1/4 cup honey or maple syrup
- 1/4 cup melted coconut oil
- 1 tsp baking powder
Instructions
- Preheat your oven to 350°F (175°C) and line an 8×8-inch baking dish with parchment paper.
- In a large bowl, mash the ripe bananas until smooth.
- Combine the mashed bananas with rolled oats, cranberries, chocolate chips, pepitas, honey or maple syrup, melted coconut oil, and baking powder. Mix until well combined.
- Pour the mixture into the prepared baking dish and spread evenly. Press down firmly.
- Bake for 25-30 minutes until lightly golden brown. A toothpick inserted should come out clean.
- Allow to cool completely before lifting out using the parchment paper. Slice into squares and enjoy!
