  • 4 oz provolone or cheddar cheese, sliced
  • 1 medium red bell pepper, sliced
  • 1 medium green bell pepper, sliced
  • 1 medium onion, sliced
  • 2 cloves garlic, minced
  • 2 tbsp olive oil (for marinating)
  • 2 tbsp olive oil (for sautéing)
  • 1 tsp paprika
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tsp Italian herbs
  • 4 soft hoagie rolls or baguettes

Instructions

  1. In a bowl, combine the chicken with olive oil, minced garlic, paprika, salt, pepper, and Italian herbs. Let it marinate for at least 30 minutes.
  2. In a skillet over medium heat, add olive oil and sauté the bell peppers and onions until tender (5-7 minutes). Remove and set aside.
  3. In the same skillet over medium-high heat, cook marinated chicken until browned and cooked through (5-8 minutes).
  4. Reduce heat to low; place cheese on top of the chicken in the skillet. Cover to melt (3-4 minutes).
  5. Slice rolls open; layer with sautéed vegetables followed by cheesy chicken. Add extra toppings if desired.
