  • 1 lb large shrimp, deveined
  • 2 tablespoons vegetable oil
  • 1 cup bean sprouts
  • ½ cup scallions, chopped
  • 1 bell pepper, sliced
  • 2 tablespoons tamarind paste
  • 2 tablespoons fish sauce
  • 2 tablespoons palm sugar
  • Juice of 1 lime
  • Optional toppings: crushed peanuts, lime wedges, fresh cilantro

Instructions

  1. Soak rice noodles in warm water for about 30 minutes until soft but firm. Drain and set aside.
  2. In a large skillet over medium-high heat, add vegetable oil and cook shrimp for about 3-4 minutes until pink and opaque. Remove from pan.
  3. In the same skillet, add more oil if needed and sauté bell pepper until slightly tender yet crisp.
  4. Add tamarind paste, fish sauce, palm sugar, and lime juice to the vegetables; stir well to combine.
  5. Return soaked noodles and cooked shrimp to the skillet; toss everything until evenly coated with sauce.
