  • 2 cups shredded Birria
  • 8 slices Oaxaca or sharp cheddar cheese
  • 8 slices rustic or country roll bread
  • 2 tbsp butter
  • 1 tbsp vegetable oil
  • 4 cups consommé
  • Salt & pepper to taste

Instructions

  1. Heat a skillet over medium and melt butter with oil
  2. Lightly toast bread slices on a separate pan until golden
  3. Layer cheese, shredded Birria, and top cheese on one slice
  4. Top with the second slice of bread
  5. Cook until cheese melts, then flip after 3‑5 minutes
  6. Serve hot with consommé for dipping
