  • 2 eggs
  • 2 cups all‑purpose flour
  • 1 tablespoon baking powder
  • ½ cup honey
  • Zest of 2 lemons
  • ½ cup fresh lemon juice
  • 1 cup fresh blueberries
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • Baking paper

Instructions

  1. Preheat oven to 350°F. Prepare loaf pan with butter and line with parchment.
  2. Whisk yogurt, honey, melted butter, lemon zest, and lemon juice until smooth.
  3. Beat in eggs, one at a time, whisking well after each addition.
  4. Sift flour, baking powder, and salt; fold gently into wet mixture.
  5. Fold in blueberries, preventing them from sinking.
  6. Pour batter into pan and bake 35-40 minutes until golden.
  7. Let cool 10 minutes, then transfer to rack to finish cooling.
