  • 2 pounds beef chuck, cut into 1-inch cubes
  • 1 bottle (12 oz) Guinness stout beer
  • 3 medium carrots, chopped
  • 2 medium onions, diced
  • 2 stalks celery, chopped
  • 3 medium potatoes, diced
  • 4 cups beef broth (or water)
  • 2 beef bouillon cubes
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Oil for searing

Instructions

  1. Heat oil in a large pot over medium-high heat. Sear the beef until browned on all sides; then remove and set aside.
  2. In the same pot, sauté onions, carrots, and celery until softened (about 5 minutes).
  3. Add minced garlic and dried thyme; cook for an additional minute.
  4. Pour in the Guinness beer, scraping any browned bits from the bottom.
  5. Return the beef to the pot and add potatoes and enough broth to cover all ingredients.
  6. Season with salt and pepper. Bring to a boil, then reduce heat to low and simmer for at least 1.5 hours or until meat is tender.
