- 4 orange bell peppers
- 1 cup cooked rice
- 1 (15 oz) can black beans, rinsed and drained
- 1 lb lean ground turkey or beef
- 1 (14.5 oz) can diced tomatoes
- 2 tsp cumin
- 1 tsp paprika
- 1 tsp chili powder
- 1 cup shredded cheddar cheese
Instructions
- Preheat the oven to 375°F (190°C). Cut tops off bell peppers and scoop out seeds. Carve jack-o’-lantern faces into each pepper.
- In a skillet over medium heat, cook ground turkey or beef until browned and fully cooked.
- In a bowl, mix cooked rice, black beans, diced tomatoes, spices, and the cooked meat until well combined.
- Stuff each pepper generously with the filling mixture and place them upright in a baking dish.
- Cover with aluminum foil and bake for about 25 minutes. Remove foil, sprinkle cheese on top of each pepper.
- Bake uncovered for another 10-15 minutes until the cheese is melted and bubbly. Serve hot.
