  • 4 medium Russet potatoes
  • 6 slices of bacon, cooked and crumbled
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 2 green onions, chopped
  • 2 tablespoons melted butter or olive oil
  • Salt to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash and dry the russet potatoes thoroughly. Prick them several times with a fork and bake directly on the oven rack for 45-60 minutes until tender.
  3. Allow the potatoes to cool slightly, then cut each in half lengthwise and scoop out most of the flesh, leaving about 1/4 inch around the edges.
  4. Brush each skin with melted butter or olive oil and sprinkle with salt. Place them on a baking sheet and bake for an additional 10-15 minutes until golden brown and crispy.
  5. Remove from the oven, fill each skin with crumbled bacon and shredded cheddar cheese, then return to the oven until the cheese melts.
  6. Garnish with sour cream and chopped green onions before serving warm.
