- 1/2 cup panko breadcrumbs

- 1 tablespoon fresh ginger, grated
- 1/4 cup soy sauce
- 1/4 cup brown sugar
- 1 cup pineapple chunks (fresh or canned)
- Additional soy sauce for flavor adjustment (optional)
Instructions
- In a large bowl, combine ground meat, panko breadcrumbs, minced garlic, grated ginger, soy sauce, and brown sugar. Mix gently until just combined.
- Shape the mixture into meatballs about 1 to 1.5 inches in diameter and place them on a parchment-lined baking sheet.
- Layer half of the pineapple chunks in the bottom of the crockpot. Add half of the formed meatballs on top.
- In a separate bowl, whisk together any additional soy sauce and remaining pineapple chunks; pour over the meatballs in the crockpot.
- Cover and cook on low for 4-6 hours or high for 2-3 hours until the meatballs are cooked through.
