  • 1/2 cup panko breadcrumbs
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1/4 cup soy sauce
  • 1/4 cup brown sugar
  • 1 cup pineapple chunks (fresh or canned)
  • Additional soy sauce for flavor adjustment (optional)

Instructions

  1. In a large bowl, combine ground meat, panko breadcrumbs, minced garlic, grated ginger, soy sauce, and brown sugar. Mix gently until just combined.
  2. Shape the mixture into meatballs about 1 to 1.5 inches in diameter and place them on a parchment-lined baking sheet.
  3. Layer half of the pineapple chunks in the bottom of the crockpot. Add half of the formed meatballs on top.
  4. In a separate bowl, whisk together any additional soy sauce and remaining pineapple chunks; pour over the meatballs in the crockpot.
  5. Cover and cook on low for 4-6 hours or high for 2-3 hours until the meatballs are cooked through.
  6. Serve hot over rice or as an appetizer.
