  • 2 medium zucchinis (about 300g)
  • 1 cup panko breadcrumbs (100g)
  • 1/2 cup grated Parmesan cheese (50g)
  • 1 tablespoon olive oil (15ml)
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Wash and dry the zucchinis, then cut them into thick slices or sticks.
  2. In a bowl, mix the breadcrumbs, grated Parmesan, Italian seasoning, salt, and pepper.
  3. In another bowl, whisk together olive oil with a splash of water to create a wet mixture.
  4. Dip each zucchini piece in the wet mixture, then coat thoroughly with the breadcrumb mixture.
  5. Preheat your air fryer to 375°F (190°C). Place the coated zucchini in a single layer in the air fryer basket.
  6. Cook for 10-12 minutes or until golden brown and crispy, flipping halfway through.
  7. Let cool slightly before serving warm with marinara sauce or your favorite dip.
