  • 12 jumbo pasta shells
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese (divided)
  • 1 cup fresh spinach (chopped)
  • ½ cup grated Parmesan cheese
  • 1 cup marinara sauce
  • 2 cloves garlic (minced)
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cook the jumbo pasta shells in boiling salted water until al dente, then drain and set aside.
  3. In a mixing bowl, combine ricotta cheese, half of the mozzarella cheese, Parmesan cheese, chopped spinach, minced garlic, Italian seasoning, salt, and pepper.
  4. Stuff each shell generously with the cheese-spinach mixture.
  5. Spread a thin layer of marinara sauce on the bottom of a baking dish. Arrange the stuffed shells in a single layer on top, then pour remaining marinara sauce over them and sprinkle with reserved mozzarella.
  6. Cover with foil and bake for 20-25 minutes. Remove the foil for an additional 10 minutes until bubbly and golden brown. Let sit before serving.
