  • 1/2 cup Kalamata olives, halved
  • 1/2 cup feta cheese, crumbled (optional)
  • 1/4 cup olive oil
  • 3 tbsp balsamic vinegar
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • Salt and pepper to taste

Instructions

  1. Cook the pasta according to package directions until al dente. Drain and rinse under cold water.
  2. While the pasta cools, chop the vegetables.
  3. In a small bowl, whisk together olive oil, balsamic vinegar, garlic, oregano, salt, and pepper to make the dressing.
  4. In a large bowl, combine cooled pasta with chopped vegetables, olives, and feta cheese if using.
  5. Pour the dressing over the salad and toss gently to coat.
  6. Chill in the refrigerator for at least 30 minutes before serving.
