  • 1 ¾ cups buttermilk (420ml)
  • 2 tablespoons unsalted butter, melted (28g) (optional)
  • 1 cup dried fruit (raisins or currants) (150g) (optional)

Instructions

  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, whisk together the flour, baking soda, and salt until combined.
  3. Create a well in the center of the dry ingredients and pour in the buttermilk; add melted butter if using.
  4. Mix until just combined with a wooden spoon or your hands; do not overwork the dough.
  5. If adding dried fruit, gently fold it into the dough before transferring it onto a floured surface.
  6. Knead lightly and shape into a round loaf. Place on the prepared baking sheet and cut an 'X' on top to allow steam to escape.
