Instructions

  1. Preheat oven to 350°F (175°C). Line a jelly roll pan (10×15 inches) with parchment paper and grease lightly.
  2. In a bowl, whisk flour, cocoa powder, baking powder, baking soda, and salt together. In another bowl, mix oil, sugar, eggs, buttermilk, vanilla, and food coloring until combined. Gradually add the dry ingredients to the wet mixture until just mixed.
  3. Pour batter into the prepared pan and spread evenly. Bake for 15-20 minutes until a toothpick comes out clean.
  4. Cool in the pan for five minutes before transferring to a sheet of parchment dusted with confectioners' sugar.
  5. For the filling, beat cream cheese, butter, sugar, and vanilla until smooth. Once the cake has cooled completely, spread an even layer of cream cheese filling over it.
  6. Roll the cake tightly using parchment as a guide. Wrap in plastic wrap and refrigerate for at least one hour before serving.
