- 3 boneless, skinless chicken breasts (about 1 lb)
- 8 oz fresh mozzarella cheese, sliced
- 4 ripe tomatoes, sliced
- 1 cup fresh basil leaves, chopped (reserve some for garnish)
- 9 no-boil lasagna noodles
- 15 oz ricotta cheese
- 1 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1 tsp salt
- 1/2 tsp black pepper
- Olive oil for cooking
Instructions
- Preheat your oven to 375°F (190°C). Grease a large baking dish with nonstick spray.
- In a skillet over medium heat, heat olive oil and cook seasoned chicken breasts for about 6-7 minutes per side until golden brown and cooked through. Shred the cooked chicken into bite-sized pieces.
- In a mixing bowl, combine ricotta cheese, minced garlic, salt, pepper, and half the grated Parmesan cheese until smooth.
- Spread a thin layer of tomato sauce in the bottom of the baking dish. Layer with lasagna noodles, half of the shredded chicken, half of the ricotta mixture, sliced tomatoes, and chopped basil. Repeat layers until ingredients are used up.
- Top with remaining lasagna noodles and cover with tomato sauce followed by mozzarella and Parmesan cheese.
- Cover with aluminum foil and bake for 25 minutes; then remove foil and bake an additional 15-20 minutes until bubbling and golden brown.
