  • 1 lb large shrimp, peeled and deveined
  • 1 ripe avocado, diced
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, sliced thinly
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • Juice of 2 limes (approximately 1/4 cup)
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Season shrimp with salt and pepper. Heat olive oil in a skillet over medium-high heat. Cook shrimp for about 2-3 minutes per side until pink and opaque. Remove from heat and let cool slightly.
  2. In a small bowl, whisk together lime juice, olive oil, chopped cilantro, salt, and pepper.
  3. In a large bowl, combine cooked shrimp with diced avocado, cherry tomatoes, cucumber, and red onion. Pour dressing over the salad and toss gently until evenly coated.
