  • 8 oz egg noodles
  • 2 medium carrots, chopped
  • 2 stalks celery, chopped

  • 3 cloves garlic, minced
  • 6 cups low-sodium chicken broth
  • 1 tsp dried parsley
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • Juice of 1 lemon

Instructions

  1. Set the Instant Pot to sauté mode. Add olive oil and sauté onions, carrots, celery, and garlic for about 3-4 minutes until softened.
  2. Add diced chicken breast along with parsley, thyme, salt, and pepper. Stir to combine.
  3. Pour in the chicken broth ensuring all ingredients are submerged. Close the lid and set to manual high pressure for 10 minutes.
  4. Once cooking is complete, carefully perform a quick release of steam. Open the lid and stir in egg noodles.
  5. Select sauté mode again and cook for an additional 5-6 minutes until noodles are tender.
  6. Add lemon juice before serving; adjust seasoning if necessary.
