- 4 cups day-old long-grain rice (jasmine or basmati)
- 1 cup frozen peas and carrots mix
- 3 tablespoons soy sauce
- 3 cloves garlic, minced
- 2 green onions, chopped (for garnish)
- 2 tablespoons vegetable oil
- 1 tablespoon sesame oil (for drizzling)
Instructions
- If using frozen prawns, thaw them under cold water until fully defrosted.
- Heat a large skillet or wok over medium-high heat. Add 1 tablespoon of vegetable oil and sauté minced garlic for about 30 seconds until fragrant.
- Add the prawns to the pan and cook until they turn pink, approximately 2-3 minutes. Remove from the pan and set aside.
- Pour in another tablespoon of vegetable oil along with the day-old rice. Stir-fry the rice for about 5 minutes until heated through.
- Mix in the vegetables (peas and carrots), soy sauce, and cooked prawns. Stir everything together for another 3-4 minutes until well combined.
