  • 2 lbs boneless skinless chicken breast, cubed
  • 2 cups marinara sauce
  • 1 cup low-fat mozzarella cheese, shredded
  • 1/2 cup Parmesan cheese, grated (divided)
  • 1 cup Greek yogurt
  • 1 cup whole wheat bread crumbs
  • 1 tablespoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, season cubed chicken with salt, pepper, and Italian seasoning. Mix well.
  3. Pour marinara sauce over the seasoned chicken and stir until coated.
  4. In another bowl, combine Greek yogurt with mozzarella and half of the Parmesan cheese until creamy.
  5. In a greased 9×13 inch baking dish, layer half of the chicken mixture followed by half of the cheese mixture. Repeat layers.
  6. Top with breadcrumbs and remaining Parmesan cheese. Bake for 30-35 minutes until bubbling and golden brown on top. Let cool for five minutes before serving.
