A comforting one‑pan Garlic Parmesan Chicken paired with herb‑roasted baby potatoes—crispy, savory, and ready in under 30 minutes.

Ingredients

  • 4 boneless skinless chicken breasts
  • 1 lb baby potatoes (halved)
  • 2 tbsp olive oil
  • 4 cloves garlic (minced)
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 1 tsp dried oregano
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 cup chicken broth
  • 2 tbsp unsalted butter

Instructions

  1. Preheat oven to 400°F. Line a baking sheet with parchment. Season the chicken with salt, pepper, and oregano.
  2. Toss halved potatoes with olive oil, minced garlic, salt, and pepper. Spread on baking sheet and roast 15 minutes.
  3. Add chicken to sheet, pour chicken broth around edges. Bake 25–30 minutes until chicken reaches 165°F.
  4. In a bowl combine Parmesan, butter, parsley, and pepper. Sprinkle over chicken and potatoes.
  5. Return to oven 3–5 minutes until Parmesan melts golden. Let rest 5 minutes before serving.
