  • 2 lbs beef chuck roast, cubed
  • 2 tbsp extra virgin olive oil
  • 1 medium yellow onion, chopped
  • 2 medium carrots, finely chopped
  • 4 cloves garlic, minced
  • 1 (14 oz) can diced tomatoes
  • 1 cup low-sodium beef broth
  • 1/2 cup dry red wine
  • Salt and pepper to taste

Instructions

  1. Select the sauté function on your Instant Pot. Heat olive oil and sauté onions and carrots for about 5 minutes until softened. Add garlic and cook for an additional minute.
  2. Add cubed beef chuck roast to the pot; season with salt and pepper. Brown the beef on all sides for 8-10 minutes.
