  • 3 cups day-old cooked rice
  • 1 cup boneless pork chops, thinly sliced
  • 1 medium onion, finely chopped
  • 1 cup carrots, diced
  • 1 cup frozen green peas
  • 2 tablespoons vegetable oil (divided)
  • 3 tablespoons low-sodium soy sauce
  • 1 teaspoon sesame oil
  • Sliced green onions for garnish

Instructions

  1. Gather all ingredients. Slice pork and chop vegetables.
  2. Heat 2 tablespoons of vegetable oil in a large skillet over medium-high heat.
  3. Add sliced pork and cook for 3-4 minutes until browned; remove from skillet.
  4. In the same skillet, add more oil if needed. Sauté onions and carrots for about 2 minutes.
  5. Add frozen peas and stir-fry for another minute.
  6. Incorporate day-old rice; break clumps while stirring. Fry for about 5 minutes.
  7. Return cooked pork to the skillet along with soy sauce and sesame oil; mix well until heated through.
  8. Garnish with green onions before serving.
