  • 1/4 cup firecracker sauce (soy sauce, sriracha, garlic, honey)
  • 1 cup bell peppers, chopped
  • 1 cup broccoli florets
  • 1 cup carrots, thinly sliced
  • 1 cup brown rice or quinoa (uncooked)
  • 2 green onions, sliced (for garnish)
  • 2 tbsp sesame seeds (for garnish)
  • 1 tbsp olive oil

Instructions

  1. Cook rice or quinoa according to package instructions; set aside.
  2. In a large skillet over medium heat, add olive oil and sauté bell peppers, broccoli, and carrots until tender-crisp.
  3. Push vegetables to one side of the skillet and add ground chicken to the other side. Cook until no longer pink.
  4. Pour in firecracker sauce; stir well and let simmer for 3-4 minutes.
  5. Assemble bowls by placing rice/quinoa at the bottom and topping with the chicken mixture.
  6. Garnish with green onions and sesame seeds before serving.
