  • 2 chicken breasts (about 6 oz each)
  • 4 cups mixed greens (spinach, arugula, romaine)
  • 1 cup cucumbers, sliced
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, thinly sliced
  • 3 tablespoons olive oil (for marinating)
  • 2 tablespoons lemon juice
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Your choice of dressing (light vinaigrette or creamy dressing)

Instructions

  1. Marinate the chicken by mixing olive oil, lemon juice, garlic, salt, and pepper in a bowl. Add chicken breasts and marinate for at least 30 minutes.
  2. Preheat your grill to medium-high heat.
  3. Remove chicken from marinade and grill for about 6-7 minutes per side or until the internal temperature reaches 165°F (75°C).
  4. While grilling, wash and chop mixed greens, cucumbers, cherry tomatoes, and red onion.
  5. In a large bowl, combine chopped vegetables. Once grilled chicken is ready, slice it into strips and add on top.
