  • 1 ½ cups all-purpose flour
  • 1 cup granulated sugar
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 2 tsp ground cinnamon
  • ½ tsp salt
  • 2 large eggs (room temperature)
  • ⅓ cup vegetable oil
  • 8 oz cream cheese (softened)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a medium bowl, beat together softened cream cheese and ¼ cup of sugar until smooth; set aside.
  3. In a large bowl, whisk together flour, baking powder, baking soda, cinnamon, and salt.
  4. In another bowl, mix pumpkin puree, eggs, and vegetable oil until smooth. Gradually combine with the dry ingredients; do not over-mix.
  5. Fill each muffin cup halfway with batter, add a dollop of cream cheese mixture, then cover with remaining batter until cups are two-thirds full.
  6. Bake for 20-25 minutes or until a toothpick comes out clean. Cool in the pan for five minutes before transferring to a wire rack.
