  • 1 lb large shrimp, peeled and deveined
  • 2 medium zucchinis, spiralized into zoodles
  • 4 cloves garlic, minced
  • ½ cup dry white wine
  • Juice of 1 lemon
  • 3 tablespoons unsalted butter (or olive oil for a lighter option)
  • Fresh parsley, chopped (for garnish)
  • Salt and pepper to taste

Instructions

  1. Spiralize the zucchinis and set them aside.
  2. In a large skillet over medium heat, melt the butter. Add the shrimp and cook until pink (3-4 minutes). Remove from skillet and set aside.
  3. In the same skillet, add more butter and sauté the minced garlic until fragrant (about 1 minute).
  4. Pour in the white wine and lemon juice; let simmer for 3-5 minutes until slightly reduced.
  5. Stir in the zoodles; cook for an additional 2-3 minutes until tender yet firm.
  6. Return the shrimp to the skillet, mixing everything well. Garnish with chopped parsley before serving hot.
