  • 1 whole chicken (34 lbs)
  • 10 cloves fresh garlic
  • 2 tbsp fresh rosemary, chopped
  • 2 tbsp fresh thyme leaves
  • 1/4 cup extra virgin olive oil
  • 4 medium carrots, chopped
  • 4 medium potatoes, diced
  • 2 medium onions, quartered
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Rinse the whole chicken under cold water and pat it dry. Season generously inside and out with salt and pepper.
  3. In a bowl, mix minced garlic, rosemary, thyme, and olive oil into a paste. Rub this mixture all over the chicken.
  4. Stuff half of the garlic herb mixture inside the cavity along with some additional garlic cloves. Arrange chopped vegetables around the chicken in a large roasting pan.
  5. Drizzle remaining herb mixture over the chicken and vegetables. Roast for about 1 hour and 15 minutes or until the internal temperature reaches 165°F (74°C).
  6. Let rest for 10 minutes before carving and serve with roasted vegetables.
