- 2 lbs chuck roast, cut into 1.5-inch cubes
- 4 slices bacon, diced
- 2 cups red wine (Burgundy or Pinot Noir)
- 2 cups low-sodium beef broth
- 3 medium carrots, chopped
- 8 oz cremini mushrooms, sliced
- 2 medium yellow onions, chopped
- 4 cloves garlic, minced
- 3 sprigs fresh thyme
- 2 bay leaves
- Salt and pepper to taste
Instructions
- Season the chuck roast cubes with salt and pepper. Chop vegetables into bite-sized pieces.
- In a large Dutch oven over medium-high heat, cook bacon until crispy. Remove and set aside.
- In the bacon fat, sear beef cubes in batches until browned. Remove and set aside.
- Sauté onions and carrots in the same pot for about 5 minutes; add garlic and cook for an additional minute.
- Deglaze with red wine, scraping up brown bits from the bottom of the pot; simmer for two minutes.
- Return beef and bacon to the pot; stir in beef broth, thyme, bay leaves, and mushrooms. Bring to a boil then reduce heat to low.
- Cover tightly and simmer for about two hours or until beef is fork-tender.
