- 1 cup black beans (canned), drained and rinsed
- 1 cup quinoa
- 2 cups fresh spinach
- 1 avocado, diced
- ½ cup salsa
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Preheat oven to 425°F (220°C). Toss sweet potato cubes in olive oil, salt, and pepper. Spread on a baking sheet and roast for 25-30 minutes until golden.
- Rinse quinoa under cold water. In a saucepan, combine quinoa with 2 cups of water. Bring to a boil, then reduce heat and simmer covered for about 15 minutes until the water is absorbed. Fluff with a fork.
- In a small saucepan over medium heat, warm the black beans for about five minutes; season if desired.
- Assemble bowls starting with quinoa as the base, followed by roasted sweet potatoes, black beans, spinach, and avocado on top.
