  • 2 medium sweet potatoes (about 400g), peeled and cubed
  • 1 cup black beans (canned), drained and rinsed
  • 1 cup quinoa
  • 2 cups fresh spinach
  • 1 avocado, diced
  • ½ cup salsa
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 425°F (220°C). Toss sweet potato cubes in olive oil, salt, and pepper. Spread on a baking sheet and roast for 25-30 minutes until golden.
  2. Rinse quinoa under cold water. In a saucepan, combine quinoa with 2 cups of water. Bring to a boil, then reduce heat and simmer covered for about 15 minutes until the water is absorbed. Fluff with a fork.
  3. In a small saucepan over medium heat, warm the black beans for about five minutes; season if desired.
  4. Assemble bowls starting with quinoa as the base, followed by roasted sweet potatoes, black beans, spinach, and avocado on top.
  5. Spoon salsa over each bowl and add lime juice or cilantro if desired.
