- 8 oz penne or spaghetti
- 1 lb chicken breast, diced
- 2 tbsp olive oil
- 4 cloves garlic, minced
- 1 (14 oz) can crushed tomatoes
- 1 tsp red pepper flakes (adjust to taste)
- 1/2 cup heavy cream
- 1/2 cup Parmigiano-Reggiano, freshly grated
- Fresh basil leaves for garnish
- Salt and pepper to taste
Instructions
- Cook the pasta in salted boiling water according to package instructions until al dente. Drain and reserve some pasta water.
- In a large skillet over medium heat, heat olive oil. Add diced chicken seasoned with salt and pepper. Cook until golden brown and cooked through, about 5-7 minutes. Remove from pan and set aside.
- In the same skillet, add minced garlic and sauté until fragrant, about 30 seconds.
- Stir in crushed tomatoes and red pepper flakes; bring to a simmer and cook for about 5 minutes until slightly thickened.
- Lower heat, then stir in heavy cream and return cooked chicken to the skillet. Mix well.
- Toss cooked pasta into the sauce mixture, adding reserved pasta water for desired consistency. Serve immediately topped with Parmigiano-Reggiano and fresh basil.
