  • 3/4 cup granulated sugar

  • 1 cup fresh raspberries (or frozen, thawed and drained)
  • Powdered sugar for dusting (optional)

Instructions

  1. Preheat oven to 350°F (175°C). In a bowl, mix graham cracker crumbs and melted butter until combined. Press into heart-shaped molds or muffin tins.
  2. Bake crusts for 10 minutes until slightly golden. Let cool.
  3. In another bowl, soften cream cheese at room temperature or microwave briefly. Mix in granulated sugar and vanilla extract until smooth.
  4. Gently fold in raspberries, being careful not to break them too much.
  5. Pour the cheesecake mixture over the cooled crusts and smooth the tops.
  6. Bake at 325°F (160°C) for 25-30 minutes until set around edges but slightly jiggly in center. Cool completely then refrigerate for at least 4 hours before serving.
