  • 12 dumpling wrappers
  • 1 cup ground chicken or tofu
  • 1/4 cup finely chopped onion
  • 1/4 cup chopped cilantro
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1/2 teaspoon chili flakes (optional)
  • 2 cucumbers, smashed
  • 3 tablespoons lime juice
  • 1 tablespoon soy sauce (for salad)
  • 1/2 cup creamy peanut butter
  • 3 tablespoons lime juice (for sauce)
  • 2 tablespoons soy sauce (for sauce)
  • Water (to thin as needed)
  • Chili flakes (to taste)

Instructions

  1. In a bowl, mix protein of choice with onion, cilantro, soy sauce, sesame oil, and chili flakes.
  2. Place about 1 tablespoon of filling in the center of each dumpling wrapper, moisten edges with water, fold and seal.
  3. In a skillet over medium heat, cook the dumplings in oil until golden brown on both sides (about 3-4 minutes). Add water to steam for another 5 minutes.
  4. Smash cucumbers lightly and toss them with lime juice and soy sauce in a separate bowl.
  5. Whisk together peanut sauce ingredients until smooth; adjust consistency with water as needed.
  6. Serve dumplings alongside smashed cucumber salad drizzled with peanut sauce.
