  • 1/2 cup unsweetened cocoa powder
  • 1 tsp baking powder
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, room temperature
  • 2 large eggs
  • 1/2 cup whole milk
  • 1/4 cup raspberry jam
  • 1/4 tsp red food coloring
  • 3 cups powdered sugar (for frosting)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a cupcake pan with liners.
  2. In a large bowl, whisk together flour, cocoa powder, baking powder, and sugar.
  3. In another bowl, cream butter until fluffy. Gradually mix in the dry ingredients followed by eggs one at a time and then milk until smooth.
  4. Fill each liner two-thirds full with batter and bake for 20-25 minutes or until a toothpick comes out clean. Let cool completely.
  5. Cut out the centers of each cupcake and fill them with raspberry jam.
  6. For the frosting, beat softened butter until fluffy, then gradually add powdered sugar and red food coloring until desired color is reached. Pipe onto cupcakes creatively.
