  • 8 oz fettuccine or spaghetti
  • 2 tbsp unsalted butter (divided)
  • 1 cup sliced mushrooms (cremini or shiitake)
  • 2 cloves garlic (minced)
  • 2 tbsp honey
  • 2 tbsp fresh rosemary (chopped)
  • Salt and pepper to taste
  • ¼ cup freshly grated Parmesan cheese

Instructions

  1. Cook the pasta in boiling salted water according to package instructions until al dente. Reserve ½ cup pasta water before draining.
  2. In a large skillet, melt 1 tablespoon of butter over medium heat. Add sliced mushrooms, season with salt and pepper, and sauté until golden brown and crispy (about 5–7 minutes). Remove from skillet and set aside.
  3. In the same skillet, lower heat and add remaining butter, minced garlic, chopped rosemary, and honey. Stir gently for about 2 minutes until fragrant.
  4. Return cooked pasta to the skillet along with reserved pasta water as needed; toss until well coated in sauce.
  5. Serve on plates topped with crispy mushrooms and grated Parmesan.
