- 4 boneless, skinless chicken breasts
- 2 cloves fresh garlic, minced
- 2 medium carrots, sliced
- 2 celery stalks, chopped
- 1 medium onion, diced
- 4 cups low-sodium chicken broth
- 2 cups dumpling mix (store-bought or homemade)
- 1 tbsp fresh thyme, chopped
- 1 tbsp fresh parsley, chopped
- Salt and pepper to taste
- 1 tbsp olive oil
Instructions
- Season chicken breasts with salt and pepper. Set Instant Pot to sauté mode and heat olive oil. Sear chicken until golden brown on both sides. Remove and set aside.
- In the same pot, add onion, carrots, celery, and garlic. Sauté for about 3-5 minutes until softened.
- Pour in chicken broth while scraping browned bits from the bottom of the pot. Return chicken to pot with thyme.
- Seal Instant Pot lid and cook on high pressure for 10 minutes. Allow natural pressure release for 10 minutes before quick release.
- Shred chicken into bite-sized pieces and return to pot. Drop spoonfuls of dumpling mix over the top.
- Seal again and cook on high pressure for another 5 minutes with natural release before opening.
- Serve hot, garnished with fresh parsley.
