  • 4 boneless, skinless chicken breasts
  • 2 cloves fresh garlic, minced
  • 2 medium carrots, sliced
  • 2 celery stalks, chopped
  • 1 medium onion, diced
  • 4 cups low-sodium chicken broth
  • 2 cups dumpling mix (store-bought or homemade)
  • 1 tbsp fresh thyme, chopped
  • 1 tbsp fresh parsley, chopped
  • Salt and pepper to taste
  • 1 tbsp olive oil

Instructions

  1. Season chicken breasts with salt and pepper. Set Instant Pot to sauté mode and heat olive oil. Sear chicken until golden brown on both sides. Remove and set aside.
  2. In the same pot, add onion, carrots, celery, and garlic. Sauté for about 3-5 minutes until softened.
  3. Pour in chicken broth while scraping browned bits from the bottom of the pot. Return chicken to pot with thyme.
  4. Seal Instant Pot lid and cook on high pressure for 10 minutes. Allow natural pressure release for 10 minutes before quick release.
  5. Shred chicken into bite-sized pieces and return to pot. Drop spoonfuls of dumpling mix over the top.
  6. Seal again and cook on high pressure for another 5 minutes with natural release before opening.
  7. Serve hot, garnished with fresh parsley.
