  • 34 boneless, skinless chicken breasts (1.5 lbs)
  • 1 cup uncooked long-grain white rice
  • 1 can (10.5 oz) cream of chicken soup
  • 1 cup low-sodium chicken broth
  • 2 cups frozen mixed vegetables (peas, carrots, corn)
  • 1 cup shredded sharp cheddar cheese
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 cup light sour cream

Instructions

  1. Preheat your oven to 375°F (190°C) and lightly grease a large baking dish.
  2. Season the chicken breasts with salt, pepper, onion powder, and garlic powder; place them in the baking dish.
  3. In a bowl, mix uncooked rice with cream of chicken soup and chicken broth until well combined.
  4. Fold in the frozen mixed vegetables and pour the mixture over the chicken evenly.
  5. Cover with aluminum foil and bake for 45 minutes; then remove foil and sprinkle cheddar cheese on top. Bake uncovered for another 15 minutes until bubbly and golden.
