Juicy chicken breast and caramelized pineapple chunks grilled to perfection with a smoky BBQ glaze.

Ingredients

  • 1.5 lbs chicken breast, cubed
  • 2 cups fresh pineapple chunks
  • 1 red bell pepper, chopped
  • 1 red onion, chopped
  • 1 cup favorite BBQ sauce
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Wooden or metal skewers

Instructions

  1. Soak wooden skewers in water for 30 minutes if using.
  2. Toss cubed chicken with half of the BBQ sauce and let marinate for 1 hour.
  3. Thread chicken, pineapple, pepper, and onion onto skewers alternately.
  4. Preheat grill to medium-high heat.
  5. Grill skewers for 6-8 minutes per side, brushing with remaining sauce.
  6. Remove when chicken reaches 165°F internal temperature.
  7. Let rest for 5 minutes before serving.
