A sophisticated savory tart featuring slow-cooked caramelized onions and melted Gruyère cheese in a buttery shortcrust pastry.

  • 3 large yellow onions, thinly sliced
  • 4 tablespoons unsalted butter
  • 1 sheet shortcrust pastry (chilled)
  • 2 cups shredded Gruyère cheese
  • 1/4 cup heavy cream
  • 1 tablespoon fresh thyme leaves
  • Salt and black pepper to taste
  • 1 tablespoon olive oil

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Melt butter and oil in a skillet over medium-low heat and sauté sliced onions for 30-40 minutes until deep golden brown.
  3. Stir in salt, pepper, and a splash of water to deglaze the pan, then remove from heat.
  4. Roll out pastry and press into a tart tin. Prick the bottom with a fork.
  5. Line with parchment and weights, then blind bake for 12 minutes. Remove weights.
  6. Spread caramelized onions over the base and top with shredded Gruyère cheese.
  7. Drizzle heavy cream and thyme over the cheese layer.
  8. Bake for 20-25 minutes until the cheese is bubbly and the crust is golden brown.
