  • 2 tsp baking powder
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp salt
  • 1 cup pumpkin puree
  • 1/2 cup milk
  • 1 large egg
  • 2 tbsp melted butter
  • 2 tbsp maple syrup

Instructions

  1. In a large bowl, whisk together the flour, baking powder, cinnamon, nutmeg, and salt.
  2. In a medium bowl, stir together pumpkin puree, milk, egg, melted butter, and maple syrup until smooth.
  3. Gently fold the wet ingredients into the dry ingredients using a spatula until just combined; do not overmix.
  4. Heat a non-stick skillet or griddle over medium heat and lightly grease with butter.
  5. Scoop about 1/4 cup of batter onto the skillet for each pancake.
  6. Cook until bubbles form on the surface and edges look set, then flip.
  7. Cook the other side for about 2 minutes until golden brown.
