  • 6 tbsp melted unsalted butter
  • 16 oz softened cream cheese
  • 1 cup melted high-quality white chocolate
  • 1.5 cups heavy whipping cream
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract
  • 2 cups sliced fresh strawberries
  • 1 tbsp lemon juice
  • 1 tbsp granulated sugar

Instructions

  1. Mix Graham cracker crumbs and melted butter; press firmly into a 9-inch springform pan and chill.
  2. Melt white chocolate using a double boiler or microwave in short bursts until smooth.
  3. Beat softened cream cheese, powdered sugar, and vanilla extract until light and fluffy.
  4. Fold the melted white chocolate into the cream cheese mixture until combined.
  5. Whip heavy cream to stiff peaks in a separate bowl, then gently fold into the chocolate-cheese mixture.
  6. Pour the filling over the chilled crust and smooth the top with a spatula.
  7. Refrigerate for at least 6 hours or overnight to set firmly.
  8. Toss sliced strawberries with lemon juice and sugar, then arrange on top of the cake before serving.
