  • 4 lbs beef short ribs
  • 2 cups robust ale or stout
  • 1 large sweet onion, chopped
  • 4 cloves garlic, minced
  • 2 cups beef broth (preferably homemade)
  • 2 sprigs fresh thyme
  • 2 sprigs fresh rosemary
  • 2 tbsp brown sugar
  • Salt and pepper to taste
  • Olive oil for searing

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. Season the short ribs with salt and pepper. Heat olive oil in a large Dutch oven over medium-high heat and sear the ribs until browned on all sides (about 3-4 minutes per side). Remove and set aside.
  3. In the same pot, sauté chopped onions until translucent (about 5 minutes). Stir in minced garlic and cook for an additional minute.
  4. Pour in the beer, scraping up any browned bits from the bottom. Add enough beef broth to cover ribs halfway.
  5. Add thyme, rosemary, and brown sugar. Return the short ribs to the pot and bring to a gentle simmer.
  6. Cover with a lid or foil and place in the oven. Braise for about 3 hours or until meat is fork-tender.
