- 4 lbs beef short ribs
- 2 cups robust ale or stout
- 1 large sweet onion, chopped
- 4 cloves garlic, minced
- 2 cups beef broth (preferably homemade)
- 2 sprigs fresh thyme
- 2 sprigs fresh rosemary
- 2 tbsp brown sugar
- Salt and pepper to taste
- Olive oil for searing
Instructions
- Preheat your oven to 325°F (160°C).
- Season the short ribs with salt and pepper. Heat olive oil in a large Dutch oven over medium-high heat and sear the ribs until browned on all sides (about 3-4 minutes per side). Remove and set aside.
- In the same pot, sauté chopped onions until translucent (about 5 minutes). Stir in minced garlic and cook for an additional minute.
- Pour in the beer, scraping up any browned bits from the bottom. Add enough beef broth to cover ribs halfway.
- Add thyme, rosemary, and brown sugar. Return the short ribs to the pot and bring to a gentle simmer.
- Cover with a lid or foil and place in the oven. Braise for about 3 hours or until meat is fork-tender.
