- 1 cup panko breadcrumbs
- 2 large eggs
- 2 tsp curry powder
- 1 cup coconut milk (full-fat)
- 2 tbsp low-sodium soy sauce
- 1 medium onion, chopped
- 3 garlic cloves, minced
- Salt and pepper to taste
- Cooking oil spray
Instructions
- Preheat oven to 400°F (200°C). Season chicken with salt and pepper or press and slice tofu.
- Set up a breading station: flour in one dish, beaten eggs in another, and panko breadcrumbs in a third. Dredge chicken or tofu in flour, dip in egg, then coat with panko.
- Place on a parchment-lined baking sheet; lightly spray with cooking oil. Bake for 20-25 minutes until golden brown.
- In a skillet over medium heat, add oil and sauté onions until translucent. Add garlic and curry powder; cook for another minute.
- Stir in coconut milk and soy sauce; simmer for 5-10 minutes until thickened. Adjust seasoning as needed.
