Ingredients
- 1 package (16 oz) phyllo dough, thawed
- 10 oz fresh spinach, washed and chopped
- 8 oz feta cheese, crumbled
- 1 medium onion, finely chopped
- 2 tbsp fresh dill, chopped (or 1 tbsp dried dill)
- 4 tbsp extra virgin olive oil (divided)
Instructions
- In a skillet over medium heat, add 2 tbsp olive oil and sauté the chopped onion until translucent. Add the spinach and cook until wilted. Remove from heat and let cool.
- In a bowl, mix the cooled spinach-onion mixture with crumbled feta and dill until well combined.
- Lay one sheet of phyllo dough on a clean surface; brush lightly with olive oil. Place another sheet on top and brush again. Cut into strips about 3 inches wide.
- Place a tablespoon of filling at one end of each strip, fold diagonally to form a triangle shape, and continue folding until reaching the end; brush the edge with olive oil to seal.
- Preheat oven to 375°F (190°C). Arrange triangles on a parchment-lined baking sheet and brush them lightly with olive oil.
- Bake for 25-30 minutes or until golden brown and crispy. Serve warm.
