- 4 small sugar pumpkins
- 1 lb lean ground turkey
- 1 cup chopped onion (about 1 medium onion)
- 3 cloves garlic, minced
- 1/2 cup fresh sage leaves, chopped
- 1 cup plain breadcrumbs
- 1/2 cup grated Parmesan cheese
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
- Slice off the tops of the pumpkins and remove seeds. Brush insides with olive oil and place them upside down on the baking sheet.
- In a skillet over medium heat, add olive oil. Sauté onions until translucent (3-4 minutes), then add garlic and cook for another minute.
- Add ground turkey to the skillet; cook until browned. Stir in sage, breadcrumbs, Parmesan cheese, salt, and pepper.
- Generously fill each pumpkin with turkey mixture, pressing down gently.
- Roast upright on the baking sheet for 30-35 minutes until tender.
