  • 1 medium head of cauliflower (about 4 cups florets)
  • 1 cup crushed unflavored pork rinds
  • 1 cup freshly grated sharp cheddar cheese
  • 2 large eggs
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C). Wash and chop cauliflower into florets, then steam until tender (about 10 minutes).
  2. Drain excess water from the steamed cauliflower and mash it in a mixing bowl until smooth.
  3. Mix in crushed pork rinds, cheddar cheese, eggs, onion powder, garlic powder, salt, and pepper until well combined.
