Ingredients

Scale
  • 2 pounds lamb shoulder or leg, cut into bite-sized pieces
  • 2 large onions, finely chopped
  • 4 cloves garlic, minced
  • 1-inch piece ginger, minced
  • 2 medium tomatoes, diced
  • 1 can (14 oz) full-fat coconut milk
  • 1 tablespoon cumin seeds
  • 1 tablespoon coriander powder
  • ½ teaspoon turmeric powder
  • 1 teaspoon chili powder (adjust to taste)
  • Salt to taste
  • 2 tablespoons oil for cooking

Instructions

  1. 1. Marinate the lamb: Mix lamb pieces with yogurt, turmeric powder, chili powder, salt, garlic, and ginger. Let marinate for at least one hour or overnight.
  2. 2. Prepare the base: Heat oil in a pot over medium heat. Add cumin seeds until fragrant. Sauté onions until golden brown.
  3. 3. Add tomatoes: Stir in diced tomatoes and coriander powder. Cook until tomatoes form a thick paste (around five minutes).
  4. 4. Combine with lamb: Add marinated lamb to the pot and cook on medium-high for about ten minutes until lightly browned.
  5. 5. Simmer: Pour in coconut milk and enough water for desired consistency. Bring to a boil then reduce heat to low; cover and simmer for one hour until lamb is tender.
  6. 6. Serve hot over basmati rice or with naan bread.
