A refreshing Mediterranean-inspired pasta salad featuring tangy feta, crisp cucumbers, and a bright lemon-herb vinaigrette.

Ingredients

  • 1 lb Rotini pasta
  • 1 cup Feta cheese, cubed
  • 1 English cucumber, diced
  • 1 pint cherry tomatoes, halved
  • 1/2 cup Kalamata olives, sliced
  • 1/2 red onion, finely diced
  • 1/2 cup extra virgin olive oil
  • 1/4 cup fresh lemon juice
  • 1 tbsp dried oregano
  • Salt and black pepper to taste

Instructions

  1. Cook pasta in salted water until al dente. Drain and cool completely.
  2. Whisk olive oil, lemon juice, oregano, salt, and pepper in a bowl.
  3. Combine cooled pasta, cucumber, tomatoes, olives, and red onion in a large bowl.
  4. Pour the vinaigrette over the salad and toss to coat evenly.
  5. Gently fold in the cubed feta cheese.
  6. Chill for at least 30 minutes before serving.
