  • 1/2 cup lemon juice
  • 2 tbsp lemon zest
  • 2 cups all-purpose flour
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 eggs
  • 2 cups powdered sugar
  • 4 tbsp softened butter (for frosting)
  • 1 tsp lemon extract

Instructions

  1. Preheat oven to 350F and grease a 9×9 baking pan.
  2. Cream butter and granulated sugar until fluffy.
  3. Mix in eggs, lemon juice, and lemon zest.
  4. Fold in grated zucchini gently.
  5. Stir in flour until just combined.
  6. Bake for 30-35 minutes until a toothpick comes out clean.
  7. Cool completely, then beat frosting ingredients together.
  8. Spread frosting on top and cut into squares.
