  • 5 large yellow onions, thinly sliced
  • 4 tbsp unsalted butter
  • 2 tbsp all-purpose flour
  • 1/2 cup dry white wine
  • 6 cups high-quality beef broth
  • 1 tsp dried thyme
  • Salt and black pepper to taste
  • 1 baguette, sliced into thick rounds
  • 2 cups grated Gruyere cheese

Instructions

  1. Melt butter in a Dutch oven over medium heat.
  2. Add sliced onions and cook until softened.
  3. Reduce heat to medium-low and cook onions for 30-45 minutes, stirring occasionally, until deep golden brown.
  4. Stir in flour and cook for 2 minutes to toast.
  5. Pour in white wine and scrape the bottom of the pot to deglaze.
  6. Add beef broth and thyme; simmer for 20 minutes.
  7. Toast baguette slices in the oven until crisp.
