  • 1 lb mushrooms, sliced
  • 3 tbsp butter
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 tbsp all-purpose flour
  • 2 tbsp smoked Hungarian paprika
  • 4 cups vegetable broth
  • 1/2 cup sour cream
  • 1 tbsp lemon juice
  • 2 tbsp fresh parsley, chopped
  • Salt and black pepper to taste

Instructions

  1. Melt butter in a large pot over medium-high heat and sauté sliced mushrooms until browned and golden.
  2. Add diced onion and cook until translucent, then stir in minced garlic for one minute.
  3. Stir in flour and cook for 2 minutes until the raw scent disappears.
  4. Add smoked paprika and stir for 30 seconds to bloom the spice.
  5. Gradually pour in vegetable broth, stirring constantly to avoid lumps.
  6. Simmer for 15 minutes on low heat until flavors are well blended.
  7. Remove from heat and stir in sour cream and lemon juice until smooth.
  8. Garnish with fresh parsley and serve hot.
